Opened the bonnet of the Disco today and discovered dried coolant all over the engine. The bottle is empty on the "cap" side but the other side is showing full with coolant. Any ideas?
The car is not overheating.

is there any evidence of coolant around the circular black air bleeding screw in the top of the 'full side'?
Mine had a scrap of fibre (could have been swarf from the thread being machined into the bottle) which prevented the screw sealing properly, and this squirted small amounts of coolant occasionally until I removed/cleaned it. Admittedly, it sounds like you are losing more than I did, but it might be worth a check - (cough) don't forget to release the pressure first at the cap before unscrewing it Dr. Ian Malcolm:

So the story is... when the car was serviced (36K) 2 weeks ago... some little vegemite decided to fill up the overflow bottle to the top... and so it spat it out!
They decided to replace the rad cap while it was these anyhow.
