You seem to have a 2005 HSE like mine - the cooler box was not a standard item on the 05 models.
I got one for mine from a crashed D3 at a breakers. £50 I think. IE - 05 D3 TDV6 HSE - Zambezi Silver

Was it easy to 'plumb' in? I've heard that its just a matter of removing the box I have and just plugging the 'cool box' in. Is this the case?

Yes, pretty much. You need to take out the trim surrounding it - lid & center console, and then take out a few screws holding the old one in, and remove it.
You then need to find the connector to supply the power to the cooler box. It was well hidden deep within the wiring loom that runs around the base of the cubby box, but fairly easy to locate. The new one just clicked in, connected the power, and put the screws in and then put all the trim back. The fuse was even already in the fusebox for it, so nothing else to do. Drive a lot of miles and driven a lot of cars. Personally in my short ownership of the D3 HSE I think the cooler which is the nearest you will get to a fridge is superb. I keep a couple of drinks and always a choccy bar in case I get home late and need an energy boost.
Agreed that it could do with being taller, but I have found a number of bottles that will go in and currently looking to source supply of the small water bottles that I can buy in bulk and keep 3 or 4 permanently in the cooler.
