DON'T DO IT!!
Personally I think you'd be better as others have already mentioned, either getting a local farmer to keep some of his sheep on your land for a couple of months/year, or if you wanted something to look after I would be thinking of getting 6-8 geese, and fattening them up for Xmas, they make great gifts!!
The problem with sheep, is they just need constant care and then they will just die on you. Your paddock will have to be fenced obviously, but if you finish up with sheep and lambs then the fencing will need to be pretty good to keep the little in.
An alternative could be a couple of donkeys over the winter months, very little care needed, but they'll keep the grass down.

Agree with the above ^
For a new project to be successful you should always embark upon something in your field ( ) and something within a growing or untapped market.
So personally I'd look at developing and growing RED leeks & daffodils.
Get off to the rugby ....... a £1 a go and you'll be a millionaire this time next year.
(Give it some thought, might not be as daft as it sounds ..... well certainly the first sentence. ) ...... always on the road less travelled 🚧

I have pigs.
You will need infrastructure to sustain any animals (feed, barns, kit) this and you will need to register your land etc etc.

Without knowing all the considerations it’s hard to answer fully, but is the paddock just a paddock?
Or is there any chance of getting planning permission on it in the future?
If that’s an option I would suggest that rather than keeping a pretty green space, it starts to slowly become an eyesore.
This could be a longterm view but these things are worth considering.
Much better chance of the locals & planners agreeing to any development if it improves the local aspect, especially if it is ‘infill’ land. Still lurking, although moved to the dark side: disco5.co.uk

As others have suggested, get a loan of a few sheep for a while, but you will need good fencing. We used to loan two neighbours a few cattle for a few weeks at a time to graze their plots. One about 1/2 acre the other 1 1/2 acres.

It's a paddock with which has an animal shelter already there - previous owners kept two alpaca things in the field. I also know that planning permission was granted for them to built stables and a tack room, which has now lapsed as they never ended up building it - This included adding road access (Currently access is gained via our drive area)
I do also have dreams of a few Glamping pods also, but not really looked into this yet
@Erea - The whole field is surrounded by high quality stock fencing and of course the usual hedgerow, there were sheep/lambs in the field when we first viewed the house - so I know that it is 'Sheep' proff Iggy/Ieuan

My first thought would be to investigate the lapsed planning consent, and consider reapplying.
It would be really useful to get consent for new road access, which might be used for later development, such as glamping, caravan site etc...
You need to talk with a proactive planner as to what you can get consent for now, and at the same time bear in mind further applications down the line.
