Any site recommendations for any of the above for a twin axle 8ft wide van?

Not a direct site recommendation, but if you bring some bicycles with you, you will find (at least in The Netherlands) excellent camping sites within bike distance.. (few miles max)
In The Netherlands we have more than excellent bike roads everywhere (no cars allowed) who bring you faster, cheaper, safer and more direct to the places where you want to be, giving the opportunity to experience even more from the area than you would otherwise. (It is not like cycling in the UK regarding safety )
And parking a big motor/car in Rotterdam/Amsterdam is almost impossible, IF you can find a proper spot, it is VERY expensive…
Brink cheap(ish) bicycles and bring a proper lock
We do it that way when visiting those city’s
Same in Belgium… Best regards
Harold

I stayed her last time I camped in Amsterdam.
gaaspercamping.nl
2min walk from the metro into the city. Site takes all types (had a cool converted german fire engine camper staying ther when I was there) and was good value when I used. 2008 HSE Stornoway Grey

On the edge of Ghent, there's a big campsite, certainly also for long caravans:

And near to the campsite, there's a free shuttle that brings you to the city-center.
Worth a visit but Bruges is even nicer.

We stayed at Camping Blaarmeersen in Ghent for a couple of nights last Summer on our way to Italy. Our van is an Adria which is 2.5m (8ft) wide and almost 8.3m long on a single axle.
We found it tight but not impossible to get around the site to our pitch but I think we may have struggled to get on the pitch without a motor mover. We did point out the van dimensions when we booked so I think that helped. The site isn't too far off the motorway and is easy to find.
The site itself was fine, the staff were very helpful and we would be happy to stay there again. As Paul says, the free shuttle bus into the centre of Ghent runs from the end of the road that runs to the site, and was a big benefit. There is also a supermarket (Delhaize) a couple of minutes away in the car.
Ghent itself is beautiful and well worth a visit. We were there when the festival was on (mid July) and there were lots of places to watch live music throughout the day and evening. There are a lot of good restaurants and (of course) plenty of good beer. The local Gentse Strop seemed very popular! 2013/13 Discovery 4 HSE SDV6 - now sadly gone!
