Garmin 2798 fits perfect (with factory trim)
I have done this twice. Once on my white 2007 HSE as I removed the factory satnav, and again in my grey 2007 SE without factory satnav.
Install is rather straight forward. I tapped into the power socket on the console so it only has power when the car is on. I did have to make a bracket to match the slope of the dash, but since it is hidden you don't need to real neat, just make sure it does not move when you push on the screen.
Also, don't get too carried away with the dremel tool when cutting the cubby out. If you ere creative, you can cut just enough to get the Garmin in where it needs to be. (maybe)

Size matters
One the more time consuming part was finding a GPS that was the right size and shape to fit the hole.
You could always make a trim piece, but lets face it. a bigger screen is better.
