I'm looking at buying iiD. I'd just like to ask - will it allow me to set a lower access height (and ideally if possible a slightly higher off road height, but that's not as important) as my elderly in laws are finding it very awkward now getting in and out

Yes, you can, but not both simultaneously
As you can set it with a certain amount higher, OR Lower…
so ALL positions higher, OR ALL positions lower.. (semi permanent)
This is simply how it works..
BUT there is a solution
What you want is a thing like this
https://www.easylift-eas.com/
But TBH all your questions regarding this and what you can do with IID are covered in this forum, many times, use the search button Best regards

I don’t think you will see a significant change to access height.
Not £500 worth anyway.

You would be better off with side steps or tree sliders to assist access, you could also use the Iid tool as well.
The max you can adjust the height is around 23mm up or down, one or the other, not both, any more with access and the suspension thinks it's grounded and goes into extended mode. It can when others can't,
It will when others won't,
It goes where others don't.
