The owner of a house we have been trying to buy for months has, just before exchange, insisted on us agreeing to her horses being buried on the land [when they die]. I can't imagine this is easy to do (legal and logistical aspects) - does anyone have any experience with such things?
All the land is within approx 80 m of a stream/river, I couldn't see the water board being overly thrilled.
They are both 17 hh, so would require a big hole.

No legal restrictions on burying dead horses in England, Scotland and Wales you can only bury pet horses. Of course care must be taken not to contaminant water courses, drains etc ans ensure they are buried deep enough not to be disturbed by scavenging animals or cultivation.
On a personal note I wouldn't agree to it.==================================

Walk away. Sounds too much like hassle, if you agree then you’re just waiting on that phone call. Plus what after that, the old owner will be wanting to be able to “visit” any time? And if you say NO! there may be a change of plans. You’ve been door stepped, tell her in no uncertain terms that it’s just not on.
Well it’s what I’d do.
PS How many horses, who decides where they are being buried, who is going to do it/pay for it, plus they are taking the horses somewhere so shouldn’t be your problem. Will she indemnify you for any potential future costs if it turns out the water authority are not happy.

What are going to do when one is ready to go, do both? It is quite common so as not to separate the pair. Are they expecting a vet with an injection or are they happy with the local knackerman or hunt kennels? Are they paying the costs? I’d get an excavator in, big hole, but of lime job done. You’re not likely to have a problem of foxes digging it up if you get a decent machine in, either way they aren’t going to carry it off If you want the property enough and from what you’ve said it sounds great, it wouldn’t worry me in the slightest, just make sure they don’t want to leave Granny behind as that gets more complicated.

I'd be wondering what has been buried there previously.

I didn’t think you were meant to bury horses due to risk of water contamination? If it’s on your own land then who’s to know but personally I’d tell her to jog on. As it’s been mentioned before she’ll probably want some sort of tombstone put in place and be allowed to visit.
I have horses and generally find a lot of horse owners (mostly female) are mental.
