I'm not sure it's possible to completely anonymise CVs in that way though.
I work in Resource Management for a multi-national defence company and I'm not provided with nationality information on candidates. But if somebody's CV says that they graduated from the University of Hyderabad it's a fairly safe bet that due to UKEO and ITAR caveats I'm going to be severely limited on where I can place them, for that reason they would have to be an exceptional candidate to even make it to interview.

It depends on how the anonymising is carried out. If the sifter is satisfied that the University of Hyderabad is valid and there are no related caveats then that element could be anonymised when put forward for the shortlist. I realise that it's a 'how far do you go' and utopian scenario but if Co's and Org's want to make the effort, then a blind recruitment process should give you the best candidates for the role without the B word falling in. One area that we cannot ultimately control the B word however is in the interviewer's mind when the candidate is sitting in front of them. I large multi-national defence company I worked for actually considered 'blind' interviews performed via instant messaging with interviewers and interviewee in different rooms.

In practice it (well, not AI, but machine) is since at least in the software industry companies tend to use keywords to highlight candidates. Not enough suitable keywords? You won’t proceed further. Thanks, HR
In my opinion all this makes is keyword bloat in everyone’s CVs. On the other hand, CVs tend to be submitted via LinkedIn and again it results in applying for positions into almost a numbers game. The cost for a candidate to apply is basically one button click. Cover letters are almost unheard of.
I’m relatively close to one company that writes in their job postings that all applications are read by a real human being. Candidates have remarked that they consider it positive.
