If you go with the Atlantech seats, they will issue you with a certificate of conformity as well as fitting all the seatbelts etc so no issues with the MOT or, more importantly, the VAT man as it is deemed to be a bona fide conversion.
Talk to Geoff about having the same seats as mine as they are more 'sculpted' than their standard offering and various people have looked at mine and commented that they are very similar to the proper Discovery seats.
I would be very, very careful about fitting genuine LR items as the dreaded Vat man (again!) may argue with greater success that you have simply reverse engineered the van into a car - added to which there is the cost and aggro to consider.
Don't know what Atlantech are currently charging but second hand seats will probably be around £750 plus belts and the aggro of adapting the rear load bay to safely mount the seats... I think that they make good sense! D4 Commercial - 65 Plate, 2016MY

You could remove them if required - I would suggest using a scribe or similar to mark the exact position as they lock into place and might not do so quite so easily if you were to re-install them slightly out of alignment.
4 bolts is all but you would need two people to lift the seat assembly out.

official line from HMCE:
"provided no more than half the dedicated load carrying area is not used the tax class will not change"
So with second row seats installed and third row folded you pass, likewise with third row seats up and second row folded you pass. Of course never use both rows at the same time while parked in the HMCE car park with a big sticker on the side reading 'i am a commercial please check my seat type/qty"

Hi, I live in Marsden, just over the hill. Come look at mine, I've had rear seats fitted by scotts seats. Removed the plastic and love it. Put some extra toys on like sat nav leather etc. Best car I've had. Call round in 10 mins away.

What are the rules for buying a commercial vehicle? What does it need to be used for? Can almost any business justify having a commercial vehicle or only ones that lug lots of equipment around all the time? Does the load space need to be divided off?
What about second hand values / market?
Thanks D4 XS MY12 Galway

You really need to talk to your accountant as the 'rules' are really taxes, VAT and BIK.
