When the suspension is raised the track or the distance from left to right wheels decrease. When lowered it increases. The track difference between Off Road and Access is about 30 - 35mm. It wont fully raise or lower until you allow the track to change. So by allowing the car to roll when you release the brake the suspension can 'settle' into the setting/height selected. Or if you are on a slippy surface the tyres will slide sideways.
Think of it as standing with your feet together then with your feet 2ft apart you will be even shorter.
...this could be useful if in a tight parking space. If you stop one side moving you could crab your car out sideways a bit at a time end of an era ....... maybe a Defender when it appears.......

Must be worse on low profile tyres, then? Presumably the tyres on 17-18" rims would "squish" sideways more easily to accommodate the track change.
Sounds like it's not a good idea to do many height changes when static - I always select access height before stopping - SWMBO is too quick with the door handle to allow it to settle once we're stationary!
And we only go from access to off-road in one move to show off - NOT the right time for something to pop / burst / fracture 2006 D3 finally swapped for a 2016 D4 Graphite in Graphite grey. No mods
